Lets Get to the Recipe ;


Gut Healing Marshmallow :


Making homemade marshmallows is surprisingly simple.

A little time. A few ingredients. And you have a healthier version of this sweet treat that you can feel a little better about when giving to your kiddos. These marshmallows melt right into your warmed cacao and also can be used in a healthy Rice Krispie Treat Recipe


Shhh…I won’t tell anyone if you want to pop one in your mouth as well 😉


Ingredients


Directions


  • Grease a 9×13 inch baking dish or line with parchment paper. Make sure to leave some length on both sides to be able to pull up and remove once finished. Coat parchment paper with thin layer of coconut oil or some arrowroot powder (if using*) to prevent sticking.

  • In your stand mixer bowl, combine 1/2 cup water with the gelatin. Whisk gently in order to combine. Set aside.

  • In a saucepan, combine the other 1/2 cup of water with honey, vanilla, and sea salt. Heat over medium to medium-high heat until it reaches the soft ball stage at around 240°F. Immediately remove from heat.

  • Turn mixer on medium-low. Slowly pour the honey mixture into the gelatin mixture.

  • Once all the honey mixture has been added to the mixer bowl, turn the mixer up to high speed and continue mixing for about 5-10 minutes until it becomes thick like marshmallow creme and starts to form soft peaks when the mixer is lifted.

  • Turn the mixer off and transfer the marshmallow creme into the prepared pan with a spatula. Smooth the mixture evenly in the pan, lightly greasing the spatula if the mixture is sticking.

  • If using, sprinkle the remaining arrowroot powder on top of the marshmallow.*

  • Allow marshmallows to set (may take overnight).

  • When set, remove the marshmallows by lifting up on excess parchment paper and transfer directly to cutting board. Grease knife with coconut oil and cut marshmallows to desired size.

Cacao Recipe:


Ingredients :

you can of course use local honey and choose to add mushrooms powder if you would like


  • Optional: Bee Pollen


Raw cacao – Cacao comes in a few different forms including block, powder, nibs, paste, grated etc. I have used the powder in the past but am now using the block. I cut off how much I want to use and chop it into smaller pieces before adding to the pot.

Maple syrup / Honey – I find maple syrup or honey tate best and are not refined sugars therefore they have a lower glycemic index as well as minerals of their own. Raw cacao is bitter so how much you use will depend on your taste. .5-1 tsp is plenty for me, and as you get used to the taste you’ll probably find yourself using less and less. If you use honey, remember the Ayurveda rule to never heat honey – just stir it in your cacao when serving.

Celtic Sea salt or Himalayan Sea Salt - Just a pinch is all that's needed to enhance flavor and mineral absorption.


Recipe

  • 1 Cup Milk of choice or water

  • 1 1/2 tbsp raw cacao (approx 20g)

  • 1 tsp maple syrup or Honey

  • 1/2 tsp tahini

  • optional additions to taste (cinnamon, cardamom, nutmeg, cayenne pepper, bee pollen etc)

*Chop your raw cacao if needed

Measure out and add all ingredients to your blender.


Blend until mixed and frothy

Pour into your favorite Mug

  • Add your gut healing Marshmallow

  • Remove all distractions if possible

  • sip slowly and with intention


You can also simmer all ingredients in a pot and pour into your mug and mix by hand or with a frother. The blender works best for me
